Bourbon Chicken and Waffle "Sliders"

Bacon and Syrup

Fried eggs, warm

Bacon and Syrup
  1. Cook bacon in large skillet until crispy; transfer onto paper towel-lined plate.
  2. Cut each slice in half and set aside.
  3. Add maple syrup to bacon grease; heat to simmer.
  4. Add bourbon, simmer over low heat for 5 minutes; allow to cool.
Chicken
  1. Cut each chicken breast in half horizontally to make 2 thin chicken fillets; season with salt and pepper.
  2. Heat oil in large skillet for frying.
  3. Dip chicken in beaten egg then dredge in bread crumbs until fully covered.
  4. Fry in oil 3-5 minutes or until thoroughly cooked, turning every 1 1/2 minutes.
  5. Keep hot until assembly.
Waffles
  1. Whisk together milk, peanut butter, vegetable oil, egg and vanilla extract in mixing bowl until well blended.
  2. Add waffle mix and whisk until well blended and smooth.
  3. Deposit 2/3 cup (#6 scoop) of batter onto a heavily greased, 375°F preheated waffle iron; cook 3-4 minutes or until golden brown.
Assembly
  1. Pour 1/4 cup syrup in shallow bowl.
  2. Cut waffles into quarters; place 1 piece on serving plate.
  3. Top with 1 piece of hot, fried chicken; pour 1 Tbsp syrup over chicken.
  4. Top with 2 bacon pieces and a fried egg.
  5. Dip a waffle quarter into reserved syrup and place syrup side down on top of egg.
  6. Serve 2 sliders with an additional 1 oz portion of syrup.
