Donal Clark who owns and operates Miller’s Seawall Grill in Galveston, Texas, knows a thing or two about the importance of grits in Southern cooking and used them as the foundation for his recipe that earned him an Honorable Mention in this year’s Neighborhood to Nation Recipe Contest.

For his Southern Cajun Shrimp ‘n Grits, Donal uses creamy Mountain High® Yoghurt, smoked gouda cheese and creole seasonings to jazz up a traditional Southern dish of cheesy grits and flavor-packed grilled shrimp. No wonder it’s a popular item at his restaurant that is known for its fresh seafood and made-from-scratch breakfasts.

“Grits are a staple of Southern cooking,” said Donal who shared that the restaurant serves breakfast all day and grits are one of the most popular side dishes.

A beloved institution in Galveston for more than 40 years, Miller’s Seawall Grills offers its customers one of the best Gulf views on the island in addition to its expansive menu of comfort food and classic Southern favorites such as biscuits and sausage gravy, chicken and waffles, lump crab benedict, chicken fried steak and po-boy sandwiches.

Donal, who took over the restaurant in 2002, has maintained many of these tried and true recipes that keep their customers coming back. However, he also loves to spend time in the kitchen to come up with new recipes to surprise and delight his customers. In fact, his creativity in the kitchen has earned him accolades in the Neighborhood to Nation Recipe Contest before. His recipes for Pecan Chocolate Ganache Brownie Cake and Italian Cream Cheese Cake with Amaretto Orange Peel are both past winners and continue to be strong sellers on his restaurant’s menu.

When asked what prompted him to enter the Neighborhood to Nation Recipe Contest for a third year in a row, Donal acknowledged this is a unique contest that celebrates the small business owner who doesn’t often get a lot of credit. “General Mills deserves a big thank you for recognizing and promoting independent restaurateurs,” he added.

Beyond running his successful restaurant, Donal’s contributions to the Galveston community are reflected in his ongoing generosity to charities such as Meals on Wheels. For the third year, he plans to share his prize money as well as money out of his own pocket to make a contribution to the charity that helps deliver meals to seniors and adults with disabilities.
