Dairy Free Coconut Curry Vegetable and Grain Bowl

This veggie-forward meal is full of roasted vegetables tossed in a coconut curry dressing served with quinoa and arugula.

Coconut Curry Dressing

Roasted diced vegetables, held warm

Quinoa, cooked

Coconut Curry Dressing
  1. Add yogurt, jalapeño, green onions, curry powder, lime juice, honey, ginger and garlic into a blender.
  2. Blend until smooth, approx. 20 seconds; cover and refrigerate until needed.
Assembly
  1. Toss roasted vegetables with Coconut Curry Dressing in batches if necessary (4 cups vegetables to 1 1/4 cups dressing).
  2. Plate 1 cup (5.5 oz) quinoa, 1/2 cup (0.5 oz) arugula and 1 cup (6 oz) vegetables; serve immediately.

  • Sweet potatoes, carrots, red bell peppers, cauliflower, red onions and peas are great ideas for roasted vegetables. Garnish with 1 Tbsp toasted sliced almonds and 1 Tbsp sliced green onions if desired. Adjust the level of spice by adding more or less diced jalapeño.
