Berry Sando (Fruit and Yogurt Spread Tea Sandwich)

Sando is Japanese for sandwich. This lovely berry-filled sandwich has a delightfully light blueberry yogurt cream cheese filling.

Filling
  1. Combine yogurt and cream cheese in a food processor until smooth.
  2. Cover and refrigerate until chilled.
Finishing
  1. Place 2 slices of sandwich bread onto work surface; spread 1 tsp of blueberry jam on each piece of bread to within 1/8-inch from edges.
  2. Deposit #40 scoop of Filling on top of each piece; spread to within 1/8-inch from edges.
  3. On one piece, place 1/2 cup raspberries, stem-side down, into filling to form and "x" pattern; gently press into filling.
  4. Fill spaces around raspberries with 1/8 cup blueberries; press into filling.
  5. Add 2, #40 scoops of Filling to top of berries; spread evenly within 1/8-inch from edges.
  6. Top with remaining piece of bread and press together gently.
  7. Trim crusts with serrated knife, wiping knife clean with damp cloth after each slice.
  8. Cut into 4 triangles and refrigerate until serving.

  • Serve with a mixed green salad to make it a meal.
