Walnut Chocolate Chip Muffins with Brown Butter Icing

  1. Heat butter in heavy saucepan over medium heat, stirring constantly, approx. 5 minutes (watch carefully to keep from burning) until butter turns brown and has a nutty aroma.
  2. Remove pan from heat; divide into 2 - 1/2 cup portions and allow to cool.
Batter
  1. Combine thawed muffin batter, 1/2 cup of (cooled) browned butter and walnuts in large mixing bowl.
  2. Deposit #16 scoop of batter into greased or paper-lined muffin cups.
  3. Bake as directed below and allow to cool completely before icing.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Icing
  1. Add icing, remaining 1/2 cup (cooled) browned butter and vanilla extract to bowl of mixer fitted with paddle attachment; mix for 1 minute.
  2. Stir then mix an additional 30 seconds until smooth; refrigerate until needed or place in piping bag with large tip.
  3. Pipe approx. 1.4 oz onto each cooled cupcake and serve.
