Vanilla and Coffee Popsicles

Grown-up ice pops layer frozen Yoplait® ParfaitPro® Yogurt and whipped topping with yummy java mousse. It's like a coffee shop on a stick!

Servings: 25 servings (1 serving = 1 - 2.5 oz popsicle)

Yoplait® ParfaitPro® Lowfat Vanilla Yogurt (16632)

1/2 bag
Non dairy whipped topping, reduced fat
2 lb
9 cups
Water, hot approx. 120°F
4 oz
1/2 cup
Instant espresso powder
0.50 oz
1/4 cup
Assembly
  1. Add yogurt and whipped topping to large stainless mixing bowl.
  2. Mix with wire whisk until well blended, light and airy.
  3. Separate mousse into 2 equal parts; refrigerate plain mousse at in airtight container until needed.
  4. Mix hot water and instant coffee until thoroughly combined; let cool for 5 minutes.
  5. Fold coffee mixture into remaining mousse; cover in airtight container and refrigerate for 1+ hours.
Finishing
  1. Add mousse flavors in separate piping bags; pipe 1 oz vanilla flavored mousse in bottom of 5 oz disposable cup.
  2. Top with 1.5 oz of coffee flavored mousse.
  3. Place popsicle stick in container and freeze 4+ hours.
Serving
  1. Fill hotel pan with hot water to approx. 1/2 height of cups.
  2. Place cups in pan for 30 seconds to loosen; remove from cups and serve.

  • Tips: Use a #20 scoop of each mouse flavor as an alternative to piping into cups, if desired.
