Pesto Spread

Filling
  1. Wash sweet potatoes and cut into 1/2-inch thick slices. Peel if desired.
  2. Spray sweet potato slices with pan spray on both sides and place on parchment-lined full sheet pans.
  3. Roast potatoes in 350°F convection oven for 15-20 minutes or until fork tender.
  4. Let cool; cover and refrigerate until ready to use.
Pesto Spread
  1. Whisk together yogurt and prepared pesto sauce; refrigerate until needed.
Waffles
  1. Pour cool water into a large mixing bowl; add full box of waffle mix.
  2. Stir with a wire whisk until no lumps remain then stir in pesto and parmesan cheese.
  3. Deposit 4 oz (#8 scoop) of batter into pre-heated, pre-oiled waffle iron. Set timer on iron.
Assembly
  1. Cut waffle into quarters; top 1 piece with 1 Tbsp leaf lettuce, 1 roasted sweet potato slice and 1 red onion slice.
  2. Top with 1 fresh mozzarella cheese slice, 1 beef steak tomato slice and 2 Tbsp of Pesto Spread followed by another pesto waffle piece.
  3. Secure with sandwich pick and serve warm.
