Grits
  1. Bring water to boil over high heat in large stock pot; whisk in grits and heavy cream.
  2. Reduce heat to medium and cook approx. 8 minutes, stirring occasionally, until thickened; remove from heat.
  3. Stir in yoghurt, cheeses, 1 lb butter and 4 Tbsp creole seasoning until well blended.
  4. Pour into steam table pan; keep warm in steam well.
Finishing
  1. Heat flat top grill to 350°F. Mix 1 1/2 tsp parmesan cheese and 1/2 tsp creole seasoning per serving.
  2. Place 2 oz butter, 2.5 oz sliced onions, 10 shrimp and 2 oz mushrooms on grill; sprinkle with 1 tsp parmesan seasoning mixture.
  3. Sauté until shrimp is pink; remove from grill.
  4. Portion 2 1/2 cups (1 lb 6 oz) grits into large rimmed serving bowl.
  5. Place shrimp mixture in a line across the top and sprinkle with remaining 1 tsp seasoning mixture; serve immediately.
