Scallion Biscuit Pancakes

These savory biscuit pancakes with scallions are paired with a Yuzu Ponzu Sauce that has hints of Yuzu juice, soy, ginger and sesame oil for unique and memorable flavors.

Yuzu Ponzu Sauce

Yuzu Ponzu Sauce
  1. Add Yuzu juice, soy sauce, sugar, rice wine, ginger, garlic and sesame oil to a saucepan; heat to a simmer, stirring frequently.
  2. Remove from heat and allow to cool; transfer to covered storage container and refrigerate overnight for flavors to combine.
  3. Strain and keep refrigerated until needed.
Assembly
  1. Thaw biscuits, covered, either at room temperature 15-30 minutes or refrigerated overnight.
  2. Press out biscuit to a 3-4-inch diameter; sprinkle 1 1/2 Tbsp chopped scallions on top within 1/8-inch from the edges.
  3. Press a second biscuit to a 3-4-inch diameter and place on top; press edges to seal.
  4. Sprinkle flour onto work surface and roll out dough, turning and flipping frequently to keep round, to a 9-inch diameter.
  5. Cut a 1-inch slice in the center and set aside.
Finishing
  1. Place pancake carefully in a straight-sided skillet with oil heated to 350°F; cook 1 minute or until lightly browned, then flip over and cook and additional 1-2 minutes.
  2. Remove from oil and drain for a few seconds, then set on cooling rack and sprinkle a pinch of salt over top.
  3. Cut into 8 triangle pieces and serve with 0.75 oz Yuzu Ponzu Sauce.
