Pumpkin puree, canned
1 lb
2 cups
Raisins
10 oz
2 cups
Cloves, ground
1/2 tsp
Coriander, ground
2 Tbsp
Cinnamon, ground
2 Tbsp
Topping
Combine 2 cups fiber cereal, ginger and water in small mixing bowl.
Allow cereal to soften and stir until well blended; set aside.
Batter
Process 8 cups cereal using a food processor until fine crumbs are formed.
Combine muffin mix and cereal crumbs in large mixing bowl; set aside.
Combine in separate bowl water, pumpkin, raisins, cloves, coriander and cinnamon.
Add muffin cereal mixture; stir until batter is smooth. DO NOT OVERMIX.
Deposit #10 scoop of batter into greased or paper-lined muffin pans.
Sprinkle Topping on evenly; bake as directed below and allow to cool slightly before serving.
