Pumpkin Muffins

A brown sugar-oat struesel tops a spectacularly moist, slightly sweet muffin.

Oatmeal Topping

Brown sugar, packed

Cinnamon, ground

Water, cool approx. 72°F

Pumpkin puree, canned
1 lb
2 cups
Pumpkin pie spice
3 Tbsp
Raisins
10 oz
2 cups
Oatmeal Topping
  1. Add all ingredients in mixing bowl; stir until topping is crumbly.
  2. Set aside until needed.
Batter
  1. Soak raisins in a bowl of warm water for 5 minutes.
  2. Combine water and pumpkin in large mixing bowl; add muffin mix and spice and stir until smooth.
  3. Drain raisins, then fold into batter; deposit #10 scoop into greased or paper-lined muffin pans.
  4. Sprinkle on 1 Tbsp Oatmeal Topping and bake as directed below; allow to cool before serving.
