Crushed pineapple, canned, drained

  1. Add water, applesauce, vanilla extract, muffin mix, brown sugar and cinnamon in mixer bowl fitted with paddle attachment; mix on medium speed for 2 minutes.
  2. Add pineapple, carrots, raisins, walnuts and coconut; mix on low speed until combined.
  3. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  4. Bake as directed below and cool before serving.
