Mini-Loaded Baked Potato Pizza

Individual biscuit-crust pizzas are topped with all of the faves in a loaded baked potato -- including bacon, sour cream and oodles of cheddar cheese.

Potato Filling
  1. Boil diced potatoes in a medium saucepan for approx. 20 minutes over high heat until fork tender; drain and mash then set aside to cool.
  2. Combine potatoes, bacon, green onion, cheese, sour cream and salt in a bowl; mash until well-incorporated and set aside.
Sauce
  1. Combine sour cream, ranch dressing, garlic powder, salt and pepper in mixing bowl.
  2. Stir together and keep refrigerated until needed.
Biscuits
  1. Thaw biscuits covered, either at room temp. 15-30 minutes until flexible or refrigerate overnight.
  2. Place a sheet pan on top of thawed biscuits and press down until biscuits flatten to 3-3 1/2-inches in diameter.
  3. Bake as directed below; as the come out of the oven, place a sheet pan on top and press down firmly to flatten.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Finishing
  1. Top each biscuit with 1 tsp of sour cream and ranch sauce, spreading evenly across the surface of the biscuit.
  2. Top each biscuit with one #40 scoop of potato mixture and flatten with your hand.
  3. Top each biscuit with 1 tsp of cheese and then 1 tsp of diced tomato.
  4. Bake as directed below.
