Mini Chocolate Truffle Tarts

Make devil's food mini tart shells, and fill with a raspberry and decadent ganache.

Crust
  1. Mix cake mix and butter in mixer bowl with paddle attachment on low speed 3 to 4 minutes or until dough comes together and is well combined.
  2. Deposit dough using #40 scoop into well greased mini muffin pans.
  3. Press dough evenly into bottom of each to make tart shells.
  4. Bake as directed below.
  5. Remove from oven and immediately depress center of each tart using handle end of spoon; allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Ganache Filling
  1. Place chocolate chips in mixing bowl.
  2. Heat cream over medium heat to a simmer.
  3. Pour cream over chocolate chips and stir to melt and combine.
  4. Fill each cooled tart shell with approx. 1 Tbsp warm ganache filling then allow to cool until ganache filling is set, approx. 1 hour.
