Dough
Add raisins to small saucepan and cover with water; heat to boiling over medium heat.
Remove from heat and allow to sit 2 minutes; drain and set aside to cool.
Add buttermilk, biscuit mix, flour and baking soda to mixer bowl fitted with paddle attachment.
Mix on low speed for 2 minutes; stop mixer, scrape bowl and paddle.
Add raisins and caraway seeds; mix on low speed an additional 2 minutes.
Assembly
Divide dough into (14) 12-oz loaves.
Round loaves on floured surface; place 7 loaves on each parchment-lined full sheet pan.
Sprinkle each loaf with flour, score an X in top, 1/2-inch deep with sharp knife.
Bake as directed below and allow to cool before slicing.
