Irish Soda Bread

Traditional Irish soda bread, with buttermilk and raisins, starts with a biscuit mix.

  1. Add raisins to small saucepan and cover with water; heat to boiling over medium heat.
  2. Remove from heat and allow to sit 2 minutes; drain and set aside to cool.
  3. Add buttermilk, biscuit mix, flour and baking soda to mixer bowl fitted with paddle attachment.
  4. Mix on low speed for 2 minutes; stop mixer, scrape bowl and paddle.
  5. Add raisins and caraway seeds; mix on low speed an additional 2 minutes.
Assembly
  1. Divide dough into (14) 12-oz loaves.
  2. Round loaves on floured surface; place 7 loaves on each parchment-lined full sheet pan.
  3. Sprinkle each loaf with flour, score an X in top, 1/2-inch deep with sharp knife.
  4. Bake as directed below and allow to cool before slicing.
