Gluten-Free Coconut Curry Soup

The sweet-hot combination of coconut and curry seasonings is enhanced by tangy Yoplait® ParfaitPro® Greek Vanilla Yogurt in a gluten-free and fabulous Indian-inspired soup.

Potatoes, fresh, peeled, small diced

Shallots, small diced

Yellow onions, small diced

Heavy cream

Coconut milk, canned

Gluten-free yellow curry powder
3 1/2 Tbsp
  1. Melt butter in a large sauce pan. Add potatoes, shallots, onions and salt; stir to combine.
  2. Cook over medium heat approx. 5 minutes or until vegetables are tender.
  3. Add cream, coconut milk and curry to a large pot; add the vegetables and stir to incorporate.
  4. Cook over medium heat, stirring frequently, until reduced by a third.
  5. Turn heat to low and fold in yogurt; remove from heat once fully combined and serve.
