Turn leftover bread, tossed in taco seasoning, into croutons for this and serve with a Black Bean Salsa in this on-trend brunch entrée.

Taco Spice Blend
  1. Combine chili powder, cumin, black pepper, onion powder, oregano, red pepper flakes and garlic powder in a small bowl.
  2. Set aside until needed.
Biscuit Croutons
  1. Cut biscuits into 1/2-inch cubes.
  2. Combine Italian dressing and 4 Tbsp Taco Spice Blend.
  3. Toss biscuit cubes into dressing mixture; spread evenly on parchment-lined sheet pan.
  4. Bake as directed below until dry and crisp; allow to cool for service.

*Rotate pans baked in convection oven one-half turn (180°) after 22 minutes of baking.
Black Bean Salsa
  1. Combine black beans, tomatoes, corn, green bell peppers, carrots, red onions and black olives.
  2. Gently stir in Italian dressing, cilantro and 4 Tbsp Taco Spice Blend; keep chilled for service.
Assembly
  1. Add 3 cups romaine lettuce to individual serving bowl; top with 1 1/2 cups Black Bean Salsa.
  2. Arrange 1 sliced egg and 1/4 of avocado on top.
  3. Finish with 1/2 cup Biscuit Croutons and 1/4 cup shredded cheese; then serve.
