Apricot Banana Smoothies

Apricots and bananas blend beautifully in a fruity yogurt smoothie.

Servings: 16 servings (1 serving = 1 - 8 oz smoothie)

Apricot halves, canned, drained, chilled

Bananas, sliced
3 lb 4.00 oz

  1. Add apricots and bananas to large capacity blender (or prepare in batches).
  2. Blend on high speed 1 minute; stop blender and scrape sides with spatula.
  3. Continue to blend until smooth.
  4. Measure to verify that pureeing has resulted in 8 cups of fruit (for nutrition requirements if needed); puree additional fruit if necessary.
  5. Whisk fruit puree and yogurt together in large container until smooth.
  6. Portion into serving cups and cover; serve chilled immediately or refrigerate overnight.

  • Substitute peaches for (some or all of) apricots for more variety if desired. Note nutrition information may change. Garnish with banana slices dipped in lemon juice (and patted dry).
