Zucchini Carrot and Cheese Quick Bread

Quick Bread Batter

  1. Combine water, carrots, zucchini, cheese, scallions and seasoning in mixing bowl; whisk together until well blended.
  2. Add muffin mix; stir with whisk or spatula until smooth.
  3. Deposit 1 lb 11 oz (3 cups) batter into 5 greased loaf pans; top each with 1 oz (1/4 cup) cheddar cheese.
  4. Bake as directed below, allow to cool and slice; cover and keep refrigerated until serving.
