Yoplait® ParfaitPro® Vanilla Bean Yogurt Pie

A smooth, rich and creamy pie has a double hit of vanilla -- from yogurt and a vanilla bean. It's all inside a crumbly cookie crust.

Vanilla beans, seeds only

Crust
  1. Mix graham cracker crumbs, butter and sugar in mixing bowl until well blended.
  2. Divide into 2 parts (approx. 9 oz each); press evenly in bottom and up sides of 2 greased 9-inch pie pans.
  3. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Filling
  1. Dissolve gelatin and cold water in small cup; set aside.
  2. Heat 1/2 pouch of yogurt and vanilla bean seeds in medium saucepan on low heat; bring to rolling simmer after approx. 4-5 min, stirring constantly.
  3. Remove from heat and add gelatin mixture immediately, mixing until smooth.
  4. Add remaining 1/2 pouch cold yogurt and mix until smooth.
  5. Deposit approx. 2 lb of filling into each cooled pie crust and chill 2-3 hours until firm, or cover and refrigerate overnight.
