Yogurt Whipped Cream Panna Cotta

A version of the silky smooth Italian custard is created with yogurt and whipped cream with subtle vanilla and lemon flavors.

Plain gelatin powder

Water, cool approx. 72°F

Heavy cream
3 lb
6 cups
Skim milk
1 lb
2 cups
Granulated sugar
2 lb
4 cups
Orange zest
2 oz
7 Tbsp
Lemon zest
1 oz
1/4 cup
Vanilla beans, split length-wise, seeded

  1. Soften gelatin in cool water, approx. 4-5 minutes. Set aside.
  2. Whisk heavy cream in mixer bowl on medium speed with whisk attachment to soft peaks, approx. 4-5 minutes. Set aside in refrigerator until ready to use.
  3. Heat milk, sugar, orange and lemon zest and vanilla beans in medium saucepan. Stir while heating until sugar dissolves.
  4. Add gelatin mixture to hot milk mixture and stir to dissolve.
  5. Cool mixture slightly, approx. 5 minutes.
  6. Stir yogurt gradually into gelatin milk mixture. Strain mixture into mixing bowl over an ice bath.
  7. Chill until mixture starts to thicken. Fold in whipped cream, and stir until blended.
  8. Deposit 3.5 oz panna cotta into 4 oz molds or ramekins, and chill for 2 hours.
  9. Dip bottoms of ramekins into hot water to release, and place each on dessert plate.
