Yogurt Pancakes with Cannoli Cream

Yogurt in both the mascarpone cream and the pancakes brings a tangy richness to a cannoli-inspired treat.

Cannoli Cream
  1. Add cream to bowl of mixer fitted with whisk attachment; beat on high for 2 minutes or until thick.
  2. Add powdered sugar and beat on high for 1 minute or until soft peaks form.
  3. Add mascarpone cheese; beat until thick and smooth.
  4. Transfer to large bowl; gently fold in yogurt using a rubber spatula then cover and refrigerate until needed.
Pancakes
  1. Scale yogurt and water into large mixing bowl; add pancake mix.
  2. Mix using a wire whisk until batter is blended and smooth. Do not over mix.
  3. Allow batter to rest for 30 minutes to hydrate before cooking.
  4. Spray griddle preheated to 375°F with pan spray or lightly brush with oil.
  5. Deposit #16 scoops (2 oz ladle) onto griddle and cook until golden brown, about 2-3 minutes per side or until puffed and edges begin to dry.
Assembly
  1. Place 3 pancakes on plate and top with 2.5 oz Cannoli Cream.
  2. Garnish with 0.5 oz chocolate chips and 0.5 oz raspberries; serve immediately.
