Wisconsin Beer Cheese Soup with Popcorned Biscuits

A rich and satisfying regional soup with the Doughboy’s twist on the traditional popcorn garnish.

Worcestershire sauce

Sharp cheddar cheese, shredded

Popcorned Biscuits
  1. Thaw biscuit dough, covered, either at room temperature approx. 15-30 minutes until flexible or refrigerate overnight.
  2. Cut biscuit into 4 strips vertically then 4 strips horizontally to create 16 small biscuit pieces.
  3. Use scissors to cut a v-shaped notch into each biscuit piece.
  4. Bake as directed below and keep warm.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Finishing
  1. Drizzle each group of 16 biscuit pieces with 1 tsp melted butter and 1 Tbsp Parmesan cheese.
  2. Keep warm for service.
Soup
  1. Combine gravy mix with 1 1/2 quarts of cool water; stir until dissolved and set aside.
  2. Melt butter in a large stockpot; sauté onions, carrots, celery and garlic until onions are translucent.
  3. Stir in beer, Worcestershire sauce, mustard and chili garlic sauce; add remaining 3 1/2 quarts of water.
  4. Bring to a boil then turn heat down to simmer for 20 minutes, stirring frequently.
  5. Stir in reserved gravy mixture; stir until it returns to a boil.
  6. Reduce heat and gradually add shredded cheese, stirring until melted.
  7. Serve 12 oz warm soup with 16 pieces of Popcorned Biscuits.

  • Garnish soup with crumbled crisp bacon or slices of smoked sausages if desired. Note nutrition information will change.
