Vanilla Yogurt Pancakes

Honey vanilla Greek yogurt adds a rich sweetness to fluffy pancakes.

  1. Add yogurt, water and pancake mix to mixer bowl fitted with paddle attachment; mix on low speed for 30 seconds.
  2. Stop mixer, scrape bowl with rubber spatula; mix for another 30 seconds or until batter is moistened.
  3. Allow batter to rest for 30 minutes to hydrate before cooking pancakes.
  4. Deposit a #16 scoop (2 oz) onto pre-sprayed or oiled griddle, preheated to 375°F. Cook 1-2 minutes per side and serve.

  • Tip: Make batter in advance, cover and refrigerate until ready to use. Add water or yogurt to thin if necessary.
