Turtle Sundae Cupcakes

Cupcakes with fudgy icing are dipped in pecans, then drizzled with caramel syrup.

Toasted Pecans
  1. Place pecans on parchment-lined half sheet pan; bake in 300°F convection oven until lightly toasted (6-8 minutes).
  2. Cool until needed for finishing.
Batter
  1. Prepare cupcake batter according to package directions.
  2. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Finishing
  1. Attach large star tip to pastry bag, and fill bag with chocolate icing. Pipe 1-oz rosette onto each completely cooled cupcake. Dip cupcakes into pecans, and drizzle with caramel sundae topping
  2. Pipe 1 oz rosette of icing (using star tip) on each cooled cupcake; dip into toasted pecans.
  3. Drizzle with caramel topping before serving.
