Truffled Brownie Bites

Bourbon-scented brownies are baked, then formed into bite-size rounds for a spectacular presentation.

Bourbon*
4 oz
1/2 cup
Butterscotch chips
1 lb 8.00 oz
4 cups
Cocoa powder
8 oz
2 2/3 cups
Powdered sugar
8 oz
2 cups
Batter
  1. Chop pecans into small diced pieces and set aside.
  2. Pour water and bourbon into mixer bowl; add brownie mix.
  3. Mix on low speed with paddle attachment 30 seconds.
  4. Stop mixer, scrape bowl and paddle.
  5. Add pecans and butterscotch chips, and mix on low speed 30 seconds longer.
  6. Deposit batter into greased full sheet pan and bake as directed below.
  7. Refrigerate directly from oven about 90 minutes or until well chilled.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Finishing
  1. Use #70 scoop to form truffle balls from cooled brownies.
  2. Coat each ball in cocoa powder or powdered sugar to finish.
