Get an entirely new--and fabulous--flavor from a lemon bar mix by adding oranges and coconut.

Mandarin orange segments, canned, juice reserved

Reserved juice plus water
2 lb 8.00 oz

Shredded coconut

Crust
  1. Empty crust mix into greased or parchment-lined full sheet pan; spread evenly and press down firmly.
  2. Set aside, DO NOT BAKE.
Filling
  1. Drain oranges and SAVE JUICE; add enough water to make 5 cups.
  2. Chop oranges into 1/4-inch pieces and set aside.
  3. Pour half of water/juice mixture into mixing bowl; add filling mix and whisk together until smooth and creamy.
  4. Add remaining water/juice mixture, and whisk together until blended.
  5. Fold in orange pieces and coconut; pour over pressed crust and sprinkle coarse sugar evenly over top.
  6. Bake as directed below and allow to cool completely.
