Top and Bottom Butter Crumb Cakes

A buttery brown-sugar crumble goes into the muffin cups before the batter does -- and then on top of the batter as well, for a double-kick of deliciousness.

Crumb Topping

Topping
  1. Combine 1 lb 4 oz (4 1/4 cups) of the cake mix, butter, brown sugar and cinnamon in bowl of mixer.
  2. Mix using paddle attachment on medium speed until mixture is crumbly.
  3. Remove from mixer and set aside.
Batter
  1. Pour 3 cups of the water into mixer bowl.
  2. Add entire amount of cream cheese, the remaining 3 lb 12 oz (12 3/4 cups) cake mix and vanilla.
  3. Mix with paddle attachment on medium speed 2 minutes.
  4. Add the remaining 2 1/4 cups water. Mix on low speed until well combined.
Assembly
  1. Deposit 1 Tbsp (heaping) of topping into each greased and paper-lined jumbo muffin cup.
  2. Deposit #8 scoop (approx. 3 oz) of batter into each muffin cup.
  3. Sprinkle 1 Tbsp (heaping) of topping on each muffin.
  4. Bake as directed below and allow cupcakes to cool completely.
