Tiramisu Quick Bread

The trendy Italian dessert with coffee and sweet cheese flavors is mimicked in a fabulous chocolate-cream cheese quick bread.

Chocolate Cream Cheese Filling
INGREDIENT

Semi-sweet chocolate chips

1 1/4 cups
Cream cheese, softened
1 lb
2 cups
Granulated sugar
4 oz
1/2 cup
Vanilla extract
2 tsp
Eggs, large

Quick Bread Batter
INGREDIENT

Coffee, brewed, cool
2 lb 6.00 oz
4 3/4 cups
Filling
  1. Melt chocolate chips in microwave.
  2. Combine cream cheese, sugar, vanilla and eggs in mixer bowl with paddle attachment 4 minutes on medium speed.
  3. Stop mixer, scrape bowl and paddle; add in melted chocolate.
  4. Mix 2 minutes on medium speed and set aside.
Batter
  1. Whisk together coffee and muffin mix in mixing bowl until batter is smooth.
  2. Deposit approx. 10 oz (1 cup) batter into 6 well-greased loaf pans.
  3. Add 2.5 oz of filling down center of each pan, cover with 10 oz batter, then 2.5 oz filling.
  4. Bake as directed below and allow to cool.
