Semi-sweet chocolate chips

Batter
Prepare cake batter according to package directions.
Divide batter, depositing 4 lb 4 oz cake batter into each of 2 parchment-lined full sheet pans.
Bake as directed below and allow to cool completely.

15-20 minutes
*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Filling
Add heavy cream to mixer bowl with whisk attachment.
Whisk on high speed until soft peaks form, approx. 2 minutes.
Add vanilla icing, and mix on medium speed until combined, approx. 30 seconds.
Ganache
Heat cream, butter and sugar to boiling in medium saucepan.
Remove from heat. Add hot cream mixture to chocolate chips.
Let stand 5 minutes. Stir mixture briskly until combined.
Assembly
Invert first chocolate sheet cake onto cardboard.
Spread cream filling evenly over chocolate cake.
Invert second sheet cake onto cream filling.
Spread ganache evenly over second chocolate sheet cake.
