Tart Cherry Walnut Cake

Dried cherries and ground walnuts are in the sheet cake and double up the flavors in the icing on top.

Prep
  1. Soak dried cherries in hot (120°-130°F) water for 5 minutes and drain well; set aside.
  2. Chop walnuts and toast at 300°F 6-8 minutes or until light brown; set aside to cool.
  3. Pulse cherries in food processor 3-4 times to chop; set aside.
Batter
  1. Prepare cake batter according to package directions.
  2. Fold 3 1/2 cups cherries and 2 cups walnuts into batter; transfer into greased or paper-lined full sheet pan.
  3. Bake as directed below and allow to cool completely.
  4. Allow cake to cool completely. Finishing Frost cakes with vanilla icing. Sprinkle evenly with remaining 2 cups cherries and 2 cups walnuts.

Finishing
  1. Frost cakes with vanilla icing.
