Pineapple chunks, canned, drained, chopped

Pineapple Glaze

Pineapple juice

Powdered sugar

Batter
Combine water and sweet potatoes in large mixing bowl.
Add muffin mix and spices; stir until batter is smooth.
Fold in pineapple and deposit #16 scoop of batter into greased or paper-lined muffin pans.
Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Glaze
Whisk together pineapple juice and powdered sugar until smooth.
Drizzle on completely cooled muffins and serve.
Substitute pineapple juice for water in muffins if desired; nutrition information may change.
