Sweet Potato Pecan Muffins

Mashed sweet potatoes are stirred into the batter along with cinnamon and brown sugar in moist, scrumptious pecan-topped breakfast muffins.

  1. Combine sweet potatoes, muffin mix, cinnamon, and sugar in mixer bowl fitted with paddle attachment for 2 minutes on low speed until well-combined.
  2. Stop mixer, scrape bowl and paddle; mix for 30 seconds on low speed.
  3. Deposit #12 scoop of batter in unlined/greased muffin tins; top with 1/2 tsp pecan pieces.
  4. Bake as directed below.
