Sweet Potato Orange Smoothies

Sweet potatoes and oranges provide not only the fabulous flavors in this distinctive smoothie, but also a big boost of vitamins A and C.

INGREDIENT

Mandarin orange segments, canned, drained, chilled
3 lb
5 3/4 cups
Sweet potato chunks, IQF
1 lb
2 1/2 cups
  1. Place chilled oranges, sweet potatoes and yogurt in large capacity blender (or prepare in batches).
  2. Blend on high speed 1 minute; stop blender and stir ingredients with spatula.
  3. Continue to blend until smooth.
  4. Portion into serving cups and cover. Serve chilled. Smoothies may be refrigerated overnight.

  • Shake up Thanksgiving with this smoothie. Garnish with additional mandarin orange slice, if desired. Substitute chilled, canned sweet potatoes for IQF if desired. Note nutrition information may change.
