Sweet and Smoked Topping

Corn Chex™ Cereal and almonds bake in a maple-agave syrup with seeds, brown sugar and cayenne. The crisp concoction is crumbled into pieces to top ice cream or yogurt.

Dark brown sugar, packed

  1. Crush approx. half of the cereal so it is in pieces; keep the remaining half un-broken.
  2. Place all cereal, almonds, coconut, and seeds into large mixing bowl; toss until combined.
  3. Heat maple syrup, agave syrup, coconut oil, brown sugar, and cayenne in a sauce pan for 2-3 minutes over medium heat until sugar is dissolved; remove from heat and let cool slightly.
  4. Pour cooled syrup mixture over cereal mixture; toss until coated.
  5. Press mixture onto sprayed, half sheet pan; spread out evenly to corners.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
  1. Invert cooled pan onto sheet pan and crumble into bite size pieces.
  2. Optional Step: After topping is baked, fill handheld smoker with hickory chips and apply smoke to cooked topping mixture in pan; immediately cover with another sheet pan to hold in the smoke. Remove sheet pan after 15 minutes.

  • Tip: Sprinkle on top of ice cream, sweetened or plain yogurt for a uniquely sweet and smoked dessert or sprinkle on fruit for an added crunch.
