Sunnyseed Muffins

Sunflower seed butter in whole grain batter and seeds on the top make a muffin a sunny way to start the day.

Sunflower seed butter

Semi-sweet chocolate chips

Sunflower seeds, roasted

  1. Stir water and sunflower seed butter together in mixing bowl with whisk until well blended. Mixture will not be smooth.
  2. Add muffin mix. Mix until well blended. DO NOT OVERMIX.
  3. Fold chocolate chips into batter.
  4. Deposit using #16 scoop into greased or paper-lined muffin pans.
  5. Sprinkle sunflower seeds evenly across tops of muffins and bake as directed below.
