Sugar Cookie Tarts

Sugar cookie dough pressed into and up the sides of mini muffin cups becomes a bite-sized tart shell to hold all things sweet and delicious, like cherry pie filling topped with whipped cream.

Tart Shells
  1. Cut cookie pucks into quarters. Spray mini muffin pan with cooking spray.
  2. Place 2 cookie puck quarters in each muffin cup. Thaw slightly 5-10 minutes.
  3. Press muffin puck quarters into bottoms of muffin cups.
  4. Bake as directed below; cool completely in pans.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Deposit cherry pie filling into cookie tart shells using #40 scoop.
  2. Garnish with whipped topping before serving.
