Stuffed and Baked Avocados

A twist on stuffed peppers features a chorizo filling in avocados, baked and served with a coconut cilantro sauce.

Coconut Milk Cilantro Sauce

Coconut milk, canned

Cilantro, fresh, chopped

Coconut Milk Cilantro Sauce
  1. Pour coconut milk into bowl; stir in chopped cilantro and lime juice.
  2. Mix until combined and set aside.
Stuffing
  1. Prepare cornbread according to package directions.
  2. Sauté oil, onion, bell pepper and jalapeños over medium-high heat until translucent, approx. 10 minutes. Set aside.
  3. Sauté chorizo over medium-high heat until thoroughly cooked (internal temperature must be 165°F), approx. 10 minutes.
  4. Crumble cornbread and combine with onion mixture, chorizo, cheese, salsa and salt in large stainless steel bowl until thoroughly incorporated.
Assembly
  1. Slice avocados in half to remove pit; fill each avocado with #20 scoop of stuffing.
  2. Place on parchment-lined full sheet pan; bake until internal temperature of stuffing is 165°F.
  3. Top with 1 Tbsp Coconut Milk Cilantro Sauce and serve.
