Strawberry Yogurt Biscuit Scones with Yogurt Topping

It's double the strawberry flavor in an outstanding twist on strawberry shortcake with strawberry yogurt baked into scones and used in the topping.

Yogurt Topping
  1. Mix 4 cups of the strawberry yogurt with the strawberries in mixing bowl; refrigerate until needed.
Scones
  1. Mix biscuit mix, granulated sugar, melted butter and 5 cups of the strawberry yogurt in large mixing bowl.
  2. Mix with rubber spatula until soft dough forms.
  3. Deposit scone dough using #20 scoop onto lightly greased or parchment-lined sheet pan in 4x6 pattern.
  4. Sprinkle each scone evenly with coarse sugar and press slightly to flatten.
  5. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Slice each cooled scone in half horizontally.
  2. Spoon 1/4 cup Yogurt Topping on bottom half of scone; add top piece and serve.
