Strawberry Tarte Tartins

Individual servings are elegant in this dessert where puff pastry lines ramekins filled with a strawberry sauce.

INGREDIENT

Strawberries, IQF, chopped

Granulated sugar
12 oz
1 1/2 cups
Vanilla extract

Prep
  1. Thaw pastry squares, covered, either at room temp. 15-30 minutes until flexible, or refrigerate overnight.
Filling
  1. Heat strawberries and sugar in medium saucepan over medium heat, stirring constantly, until mixture comes to a boil.
  2. Reduce heat to low and simmer 2 minutes.
  3. Remove from heat; add vanilla extract and set aside until needed.
Assembly
  1. Place each pastry square in greased 4-inch ramekin, allowing edges to fold over dish.
  2. Add approx. 1/2 cup filling in each ramekin; bake as directed below until pastry is golden brown and allow to cool slightly before serving.
