Strawberry Shortcake Tarts

Biscuit dough rounds on muffin cups form the tender tart shells. Dip the shell edges in chocolate for an elegant touch, and fill with a rich cream cheese mixture, strawberries and a drizzle of chocolate.

Cream Cheese Filling
  1. Mix softened cream cheese and powdered sugar in mixer bowl with paddle attachment on medium speed about 3 minutes or until creamy.
  2. Place in cooler until ready to use.
Tart Dough
  1. Spray back side of standard-size muffin pan with cooking spray.
  2. Mix water and biscuit mix in mixer bowl with paddle attachment on low speed until soft dough forms (approx. 15 seconds).
  3. Place dough on floured work surface. Sprinkle dough with flour, and divide in half.
  4. Roll each piece into thin rectangle approx. 1/8-inch thick, or the thickness of a nickel.
  5. Cut dough with 4 1/2-inch round cutter, and place each piece on back of sprayed muffin cup to form a tart shell.
  6. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Assembly
  1. Cut 3-4 slices out of each strawberry and set aside.
  2. Melt chocolate over double boiler. Dip rim of each cooled tart into chocolate, allowing to set.
  3. Place 1 oz (#30 scoop) cream cheese filling into bottom of tart.
  4. Layer sliced strawberries evenly around inside of tart.
  5. Place whipped topping in piping bag fitted with tip. Pipe rosette of whipped topping over strawberries.
  6. Drizzle remaining chocolate over each finished tart.
