Strawberry Shortcake Pizza

Light corn syrup

Shortbread cookies, finely crumbled

Strawberry pie filling, prepared

Prep
  1. Place the pizza crust on a parchment lined sheet pan. 
  2. Bake until crust is fully cooked and dark golden brown; cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking. 
Whipped Cream Icing
  1. Add heavy cream to mixer bowl fitted with whisk attachment.
  2. Whisk on high speed until soft peaks form, approx. 2 minutes.
  3. Add vanilla icing, and mix on medium speed until combined, approx. 30 seconds.; set aside.
Assembly
  1. Whisk together corn syrup and water until fully combined; brush on the outside rim of the pizza crust.
  2. Sprinkle 1.5 oz of crushed shortbread cookies on the outside rim of crust, lightly pressing down to ensure they stick.
  3. Spread the Whipped Cream Icing evenly on the inside of the crust using an offset spatula.
  4. Pour or pipe the strawberry pie filling in a spiral shape, leaving space between rings.
  5. Swirl pie filling through the icing in a figure 8 pattern using a wooden dowel or toothpick.
  6. Place sliced strawberries along the inside edge of the pizza crust.
  7. Sprinkle the remaining 0.5 oz crumbled shortbread cookies evenly over the top.
  8. Cut into 8 pieces and serve immediately.
