Steamed Italian Purses

Dumplings, Italian-style. Pancetta and Italian sausage are steamed in a delicate biscuit dough.

Pizza sauce

Dumpling Dough
INGREDIENT

Water, cold approx. 50°F

Parmesan cheese, shredded

Filling
  1. Place oil in preheated skillet. Add Italian sausage and pancetta and cook until Italian sausage is browned and cooked through.
  2. Add onion, peppers and garlic; cook 2 to 3 minutes. Drain mixture in colander.
  3. Return meat mixture to skillet; add pizza sauce, stir together and cook 1 minute on medium-high heat.
  4. Keep warm.
Dumpling Dough
  1. Prepare dough according to package directions, adding Parmesan cheese in step 2 with mix.
Assembly
  1. Drop dough using #10 scoop on lightly floured work surface; flatten into approx. 5-inch circle, using additional flour as needed to keep dough from sticking.
  2. Deposit filling mixture using a #40 scoop into center of dough.
  3. Gather sides, pulling up toward top, sealing dough together to form pocket.
  4. Place filled pockets on steam pans and put in steamer 7-8 minutes. Serve warm.
