Spooktacular Cake (Halloween Cake)

Halloween just got a little scarier -- and more yummy -- with a white cake sporting a friendly ghost.

Powdered sugar, sifted

Orange food coloring

Batter
  1. Pour 3 1/2 cups water and the cake mix into mixer bowl fitted with paddle attachment; mix on medium speed 2 minutes.
  2. Add remaining water gradually while mixing on low speed.
  3. Stop mixer, scrape bowl and paddle; mix on low speed an additional 2 minutes. DO NOT OVERMIX.
  4. Deposit batter into greased and parchment-lined full sheet pan.
  5. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Finishing
  1. Reserve 2 cups of vanilla icing.
  2. Add remaining vanilla icing, powdered sugar and food coloring in mixer bowl with paddle attachment.
  3. Mix on low speed 2 minutes; stop mixer, scrape bowl and paddle.
  4. Level cake as necessary and ice entire cake with light orange icing. (If using an air brush, ice cake white and spray entire cake light orange.)
  5. Spread reserved vanilla icing in center of cake in ghost shape using metal spatula.
  6. Pipe chocolate icing (using #6 writing tip) onto the ghost to form two circles for eyes and a larger circle for mouth.
  7. Write the letters B-O-O on background and decorate as desired.
  8. Pipe white border around top edge of cake (or pipe bottom edge border if not serving in pan).
