Spicy Red Pepper Feta Hummus with Spinach Triangles

This spicy version of hummus with Yoplait® yogurt, Feta and red peppers is a hop and a skip away from ordinary, paired with Spinach Triangles for a Greek inspired appetizer.

Spinach Triangles

Spinach, fresh, roughly chopped

Onions, finely chopped

Dill, dried

Black pepper, ground

Mozzarella cheese, shredded

Hummus
  1. Add chickpeas, roasted red peppers, yogurt, lemon juice, olive oil and garlic to the bowl of a food processor; process until smooth.
  2. Add Feta and red pepper flakes; pulse until mixed and refrigerate for service.
Spinach Triangles
  1. Thaw pie dough, covered, either at room temperature 15-30 minutes or refrigerated overnight.
  2. Remove paper on 6 pie dough rounds and place sticky side face up onto parchment-lined full sheet pan.
  3. Press 2 oz (2 cups) of chopped spinach onto each pie dough round, all the way to the edge.
  4. Layer evenly on 2 Tbsp onions, 1/4 tsp dill and 1/16 tsp black pepper.
  5. Add 1/4 cup mozzarella and press down to flatten; top with remaining pie dough rounds (removing paper and placing sticky side up).
  6. Sprinkle with 1/2 tsp sesame seeds; cut carefully into 4 pieces.
  7. Bake as directed below until crust is flaky and golden brown.

Assembly
