Southwestern Pumpkin Biscotti

This savory, twice-baked cookie is an amazing side served with chili and other southwestern entrees, and a super snack that stands on its own.

Pumpkin puree, canned

Chili powder
2 Tbsp
Cumin, ground
1 Tbsp
Cayenne pepper, ground
1/2 tsp
  1. Add all ingredients to mixer bowl fitted with paddle attachment; mix on low speed for 3-4 minutes until well blended.
  2. Divide dough into 4 equal loaves (approx. 2 lb each); shape each loaf into 20 x 3 x 3/4-inch strip.
  3. Place 2 strips of dough on greased or parchment-lined full sheet pans.
  4. Bake as directed below and allow to cool.

  1. Cut each loaf into 25 slices (approx. 3/4-inch thick).

  3. Bake again, allow to cool and serve.
