This chopped salad combines the look of Lebanese tabouli with traditional Southern United States ingredients like kale, black-eyed peas and buttermilk biscuits.

Biscuit Crumbles
  1. Crumble baked biscuits into 1/4-inch pieces; divide evenly between 2 parchment-lined sheet pans.
  2. Bake as directed below until toasted and dry; cool completely before placing in air-tight container for service.
BBQ Vinaigrette
  1. Combine Italian dressing and BBQ sauce; hold chilled.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Assembly
  1. Combine kale, onions, tomatoes, red bell peppers and black eyed peas in a large bowl.
  2. Add 2 1/2 cups of BBQ Vinaigrette and toss to mix.
  3. Serve 2 3/4 cups salad mixture with 1/2 cup Biscuit Crumbles tossed together; add 2 Tbsp BBQ Vinaigrette on the side.

  • Garnish with 2 slices of crumbled, crisp bacon or serve with fried chicken tenders. Note nutrition information will change.
