Southern Pimento Cheese Biscuit Bomb

Pimientos, diced, drained

Mayonnaise

Lemon juice

Hot sauce
2 tsp
Butter, melted

Black pepper, coarsely ground

  1. Thaw biscuit pucks, covered, for 20 minutes at room temperature or overnight in refrigerator.
  2. Combine cream cheese, pimento, cheddar cheese, mayonnaise, salt, pepper, lemon juice, and hot sauce in mixing bowl; mix on medium-high speed about 3 to 4 minutes until mixture is smooth.
  3. Divide cheese mixture into 16 equal portions using a level #40 scoop; place on parchment-lined half sheet pan and freeze about 2 hours until solid.
  4. Stretch or roll biscuit dough to 3-inch diameter and place one piece of frozen cheese mixture in the center.
  5. Pinch edges of biscuit together to seal; roll into ball.
  6. Brush biscuits with butter; sprinkle each with 1/8 tsp pepper.
  7. Place biscuits on parchment-lined half sheet pan, seam side down, or alternately place into generously sprayed muffin tin.
  8. Bake and serve warm.
