Smoked Salmon and Avocado Cream Mini Parfaits

Avocado mousse and chive cream, made with Yoplait® Nonfat Plain Yogurt, complement smoked salmon tidbits in a sassy, savory parfait.

Avocado Mousse

Assembly

Smoked salmon, finely chopped

Avocado Mousse
  1. Place all ingredients for the avocado mousse in a blender or food processor.
  2. Mix until smooth and creamy. Set aside under refrigeration until ready to assemble.
Chive Cream
  1. Place all ingredients for chive cream in a bowl.
  2. Mix until combined. Set aside under refrigeration until ready to assemble.
Assembly
  1. Deposit Avocado Mousse using a #40 scoop (0.5 oz) into each of 44, 3 oz shot glasses or parfait cups.
  2. Deposit Chive Cream using a #40 scoop (0.5 oz) on top of avocado mousse.
  3. Place 2 tsp salmon on top and serve immediately or hold under refrigeration until ready to serve.
