Smoked Lox Cruffins

A buttery, flaky cruffin made with Pillsbury™ Freezer-to-Oven Butter Croissant Dough makes the perfect vessel for all the favorite lox bagel fixings, including smoked salmon, dill, capers, and more.

Smoked salmon lox, chopped

Prep
  1. Thaw croissants on a parchment lined full sheet pan at room temperature for 15-30 minutes until flexible.
  2. With egg wash side up, tuck croissant tails underneath itself, then tuck the sides of the croissant underneath itself and pinch together to form a ball shape.
  3. Place croissant seam-side down, in greased, standard muffin pan; lightly press dough down into pan.
  4. Bake as directed below until deep golden brown and baked through; internal temperature should be at least 210°F.
  5. Allow croissants to cool in pan 15-30 minutes to retain shape, then transfer to a wire rack to cool completely for another 30-45 minutes.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Filling
  1. Mix all filling ingredients in a large bowl until fully incorporated.
  2. Transfer salmon filling into a piping bag with a 1-inch hole.
Assembly
  1. Carefully cut out a small hole in middle of each completely cooled croissant top; remove piece.
  2. Brush the croissants with melted butter and sprinkle with parmesan cheese.
  3. Pipe approx. 1.5 oz Filling into center of each croissant; serve cold.

  • Garnish with an additional slice of salmon, fresh herbs, or other lox bagel favorites.

  • Substitute Pillsbury™ Freezer-to-Oven Croissant Dough Butter Pinched 3.75oz (13445) and bake in a jumbo muffin pan for larger cruffins – make sure to increase the filling amount!
